On the tenth day of Christmas We bring You:


CHRISTMAS PICKLES

10 pickles, sliced thin
1 cup of green peppers
1 cup of red peppers
1/2 cup of onions, diced
1 cup of vinegar
2 cups of white sugar
1 tablespoon of mustard seed
1 tablespoon of dill seed
1 tablespoon of salt

Heat vinegar and sugar until it comes to boil. Do not boil. Cool and pour over pickles,
peppers and onions. Will keep without sealing for months in refrigerator.

CHRISTMAS CAULIFLOWER

1 head of cauliflower
4 oz. can of sliced mushrooms
1/4 cup of diced green pepper
1/4 cup of butter
1/3 cup of flour
2 cups of milk
1 teaspoon of salt
1 cup of shredded Swiss cheese
2 tablespoons of chopped pimento

Break cauliflower into medium size flowerets. Cook in boiling water until crisp-tender,
about 8 to 10 minutes. Drain. Saute mushrooms and green pepper in butter in medium
saucepan until tender. Stir in flour. Gradually stir in milk. Cook and stir until smooth
and thickened. Stir in cheese, salt and pimento. Heat oven to 325 degrees. Put half of
the cauliflower into a buttered casserole dish. Cover with half of the sauce. Then add
remaining cauliflower and remaining sauce. Bake until hot and bubbly, about 15
minutes. Serves 8 to 10.

CHRISTMAS GINGER COOKIES

6 cups of flour
1 tablespoon of baking soda
1 tablespoon of ginger
1 teaspoon of cloves
1 teaspoon of cinnamon
1 teaspoon of nutmeg
1/2 teaspoon of salt
1 cup of Crisco shortening
1 cup of molasses
1 cup of packed brown sugar
1/2 cup of water
1 large egg
1 teaspoon of vanilla

Mix flour, soda, spices and salt. Beat shortening, molasses, sugar, water, egg and vanilla until well blended. Gradually beat in flour mixture. Will be soft. Divide into fourths. Pat each 1/4 into 1″ thick round. Wrap in plastic and refrigerate at least 3 hours or up to 1 week. Roll on lightly floured surface to 1/8″ thick, cut with gingerbread men cutters and bake at 350 degrees for 10-12 minutes. Cool slightly on cookie sheet, then transfer to wire racks to cool completely.

On the eleventh day of Christmas We bring You:


CHRISTMAS SWEET POTATO CASSEROLE

3 cups of cooked mashed sweet potatoes
2 eggs
1 cup of sugar
1/2 cup of milk
1/2 teaspoon of salt
1 stick of butter, softened
1 teaspoon of vanilla extract
1 cup of light packed brown sugar
1/2 cup of flour
1 cup of finely chopped pecans

In one bowl, mix sweet potatoes, eggs, sugar, milk, salt; add 1/2 stick butter and vanilla.
In another bowl add brown sugar, flour, nuts, and 1/2 stick butter. Add 1/2 nut and flour
mixture in potato mixture. Save 1/2 nut and flour mixture for topping. Place in baking
dish and add topping. Bake 350 degrees for 1/2 hour.

CHRISTMAS HONEY COLA HAM

12-13 lb. pre-cooked ham
2-3 liters of Coke Cola soda
Cloves (whole)
Clove honey or wild flower honey or corn syrup

Prepare ham by placing in a deep steaming pan with rack. Pour soda into pan and bring
liquid up to middle sides of ham. Steam (simmer) slowly for 2 1/2 hours. Ham will look
very caramelized. Place ham on cooling rack. Cool for 10 minutes. Brush with honey.
Score ham and pierce ham with whole cloves. Brush again with honey and bake at 350
degrees for 30 minutes or until golden. Serves 10-12.

SWEDISH CHRISTMAS COOKIES

1 cup of butter
2 egg yolks
Dash salt
1 egg white, slightly beaten
4 tablespoons of chopped almonds
3/4 cup of sugar
1 teaspoon of almond extract
2 1/2 to 2 3/4 cups of flour
2 tablespoons of sugar

Cream butter and sugar until light and fluffy. Beat in egg yolks and almond extract. Add salt. Sift in flour and mix well. Make it pliable dough and chill 30 minutes. To shape, divide dough into 6 equal portions. Roll out each portion to make a rope, about 24″ long. Divide each into 2″ strips. Place on cookie sheets. Brush with egg whites and sprinkle with sugar and almonds. Bake at 375 degrees for about 10 minutes or until cookies feel firm and are lightly browned around the edges. Let cool on cookie sheet a few minutes then remove to a wire rack to cool completely.

MerryChristmas A Merry Christmas and a Happy New Year!

On the twelfth day of Christmas We bring You:


CHRISTMAS PUDDING
2 cups of sifted flour
1 teaspoon of baking powder
1 teaspoon of cinnamon
1 teaspoon of allspice
1 teaspoon of nutmeg
1/2 teaspoon of cloves
1/2 cup of butter
1/2 cup of sugar
4 eggs
1 lb. of dates, chopped
Oil
Sugar

Roll cooking oil in two, 1 pound coffee tins, drain and sprinkle inside with sugar. In a
large bowl, stir together the flour, baking powder, cinnamon, allspice, nutmeg and cloves.
Cream the butter and sugar together with a mixer. Add the eggs one at a time, beating
after each addition. Add the dates and beat well. Blend in the dry ingredients. Turn the
batter into the prepared coffee cans. Place several layers of aluminum foil on the tops
and tie securely with string. Place the cans on a rack in a large kettle and add boiling
water to a depth of 3/4 the height of the cans. Cover the kettle and gently boil the
puddings for 3 hours, replenishing the water as needed. Turn out onto a rack to cool.
They may be frozen, or stored for several weeks in the refrigerator.

FOR THE SAUCE:
2 tablespoons of cornstarch
1/2 cup of sugar
1 cup of hot water
1 egg, beaten
Pinch of salt
2 tablespoons of butter
Red and green Maraschino cherries
Pineapple chunks
Raisins
Pecans
Sugar cubes
Lemon extract

In a saucepan, combine the sugar and cornstarch. Add the hot water, beaten egg and salt.
Cook over medium heat, stirring constantly, until thickened. Drop in the butter and stir
until melted. Add the fruit and pecans. Pour the sauce into a serving container. Drop the
sugar cubes briefly in lemon extract. Place the pudding on a serving platter and surround
with the sugar cubes, placing several on top of the pudding. Light the cubes, and bring
the flaming pudding to the table. Slice the pudding, spoon on the sauce, and top with
Cool Whip.

HEAVENLY CHRISTMAS SALAD
1 lg. can of pineapple
2 tablespoons of sugar
2 tablespoons of cornstarch
1 tablespoon of butter
2 eggs, beaten
1/2 pint of whipping cream
Red grapes (seeded, cut in half)
Marshmallows (cut in halves or thirds)
Apples
Bananas

Drain pineapple chunks, heat juice in double boiler. Add sugar, cornstarch, butter and
eggs. Boil until thick. (This can be made day before.) Add red grapes, marshmallows to
drained pineapple chunks. Approximately an hour before serving, add apples and bananas
to fruit mixture. Then fold in the custard and the whipped heavy cream.

NEW ENGLAND CHRISTMAS COOKIES
3/4 cup of melted shortening
3/4 cup of melted butter
1 cup of brown sugar
1 cup of white sugar
1 teaspoon of cinnamon
1 cup of sliced blanched almonds
3 eggs, beaten
1 teaspoon of salt
3 1/2 cups of flour
1 1/2 teaspoons of soda

Cream sugar and melted ingredients. Beat eggs and add to creamed mixture. Sift together all dry ingredients and beat into dough. Stir in almonds. Form dough into small rolls and wrap in wax paper. Refrigerate overnight. Slice thin and bake at 350 degrees for 8 to 10 minutes.

DO NOT OVERBAKE. BUT ENJOY.

Whether you’re struggling financially, emotionally, physically, or spiritually, You don’t have to suffer if you are hurting for money.

Renting can be expensive, and sometimes not exactly worth the money you pay. You’ve got to pay your monthly rent, plus your electric bill, water bill, gas bill, and other bills. Consider everything monthly. The rates build up, and you can easily fall into debt.

No one wants to get in debt, but sometimes it seems unavoidable. However, there is a way you can afford it, and get your money’s worth every month, while seemingly lowering your monthly payments. No matter what the situation, there’s an apartment that’s right for you.

  • Get a small side Internet job that you can work from home. Many online jobs allow you to put in some time once a week or so on weekends, so you can have more money coming in. This can quickly equate to earning an extra $100 a month.
  • Sell items on eBay. If you have a hobby of garage sale hopping, look for small treasures when you’re out shopping. Buy cheap and sell high on eBay. EBay is an online auction website that allows you to sell items quickly and easily. If you stick to it and make it a priority, you can easily earn an extra $100 a month.
  • Turn a hobby into a small business. If you enjoy web design but don’t do it as a career, advertise that you can create web sites for people quickly and easily. Don’t charge too much, because you want to do it as a hobby and you do want to get customers. But charging a nominal fee is a great way to turn something you enjoy doing into $100 each month.
  • Find people who owe you money. If you start tying up loose ends and tracking down people you have judgments against, you can start collecting cash. Also look at cable companies that you may have overpaid. Ask for your refund. Find companies that you owe money to and it quite possibly can turn into an extra $100 each month.
  • Start selling old things in your house that you no longer need. Everyone has things in their home that they haven’t used in a year or more. These items oftentimes can be sold quite easily and not missed. Start posting these items on sites like Craig’s List or eBay and you can quickly and easily earn extra income each month. This is also a great way to start sorting out the things from your home that you no longer need. Soon enough you will have a streamlined household.

  • There are some more expensive apartments. However, if you want more luxury with the place you’re living. Obviously, the gas and electric bills are very high due to everyone living in the apartment, but again, the bills are divided up fairly equally. Another good thing is that, within reason, you can use a fair amount of water and gas and electricity and not get charged more for it every month.
  • Living in an apartment and having one fixed bill per month can be a major stress reliever, and a good way to help things get organized. Apartments can be fun and cheap places to live.
  • Annual fees are expenses paid every year for keeping/owning your credit card. These fees are usually tracked by points. For example, 10 points equals 10% of the original credit line. So if you’ve got a $200 bill, you might have 25 days to pay it, and if you’re late on the payment, you’ll get charged a certain amount of money in addition to the original $200 fee.

    Energy Tips to Keep You from Maxing your Household Budget

    With all the hype about saving energy and saving money these days, everyone can use some helpful tips on how to prevent your budget from being maxed out and saving the environment around you at the same time. This involves a variety of different factors.

    One of the more obvious tips is to turn out the lights when you are not in a room. That alone can save you at least a few dollars a month. Less-obvious ways to reduce cost of energy includes ‘Converting to renewable energy’. Three time-tested natural sources of energy are sunlight, wind, and water and they are usually combined with solar panels, windmills, or generators.

    Even cars nowadays can be converted to run on other types of renewable fuel, such as wood or plant products.

    Investing in more durable items also helps in the long run. Sometimes the up-front cost of purchasing longer-lasting appliances, furniture, and other household items can be more than you want to pay. However, this short-term investment has long-term benefits, for one, most often those items that are well-made are usually more energy efficient.

    - Heat and cool your house naturally. This can be achieved by pulling the shades during the day and pulling them up at least part way at night. (If you value your privacy blinds are useful for this purpose.  Double-glassing is also an option, yet sometimes costly, is usually a once off cost and will save you on heating and cooling costs in the long run.

    - Insulate your home. This will reduce the cost of heating and cooling. Along with that, make sure you close all doors and windows while the home heater or air conditioner is on.  Make sure your doors and windows seal around the edges, this can be accomplished by running a rubber / sealer tape (found in most hardware stores) around the inside edge of the frame, when the door or window is closed it presses against the rubber seal and helps with locking in air. I have even found this to be a great help with cleaning since it prevents dust from blowing into your home and causing you to spend less on cleaning and vacuuming.

    - Wash full loads of clothes and dishes. When possible, do not run the dishwasher just for a few items. If you want to clean a stray dish a soap dispenser with a scrub brush attached is perfect for this purpose.

    - Hang clothes on the line instead of drying them with a dryer. This will dramatically cut down on the energy used, as you will not be running the dryer nearly is often.  Clothes dry fastest on a hot, dry, sunny day, this goes without saying, yet many choose not to use this free yet sometimes abundant resource.

    - Shut down your computer, television, car, and miscellaneous devices. Any computer or electronic item will use up the most energy, so it is important to shut it down at night or during other times when you are not using them. Any charging devices or power-packs (like those used for mobile phones, laptops and printers) should be unplugged or turned off when not in use as this continues to use electricity even though the device is not connected to it.  TV’s or Sound systems should also be switched off by the switch or plug if not in use, since keeping them on standby also still uses electricity.

    - Use compact florescent light bulbs. You usually get more usage for these for the price, as they last quite a bit longer than traditional bulbs.  These days you can get these florescent bulbs in many variants, from bright white light to soft warm yellow light.

    - Use power strips, and surge protectors. Any large device that you have such as a DVD player, television, or computer should be plugged into a box such as this. If you are not sure what they are, contact your local computer store and they will point you in the right direction. In a nutshell, power strips usually have outlets for plugging in electrical devices of all kinds (heavy-duty and light-duty). This power supply is then plugged into the wall. Using these devices can cut your bill as much as 30%.

    - Set your water heater at a lower temperature in the summer. This will lower the cost of heating your water for shower, dishes, household cleaning, car washing, and other home duties. Instead of a long shower, take a bath (or a short shower). If you absolutely cannot be content with taking a five-minute or ten-minute shower then you should consider taking a bath instead. It will save you money. However, if you take a shorter shower it would use less water than filling your tub with bath water.

    More energy saving tips can be found on local and national government websites. You can also call energy savings hotlines for further advice. Additionally, non-profit environmental groups have educational resource regarding various aspects of energy-saving and conservation.

    Water Conservation for the 21st Century

    Many people dismiss the idea that we need to conserve water. After all, it’s all around us in lakes, rivers, streams and the seas, in the rain and snow that falls from the sky.

    But consider the following statistics:

    • – 97% of the earth’s water is salty or undrinkable due to contamination of some sort
    • – 2% is locked in ice caps or glaciers
    • – That only leaves 1% of the world’s water that is available for human consumption of which only a small percentage is found above ground or in the air
    • – We need water for everything from our bodies to crops and animals. We depend on it for all our needs, personal, business, manufacturing, and community.
    • – Our water supply is threatened everyday by deforestation and runoff from industry and toxic pollution
    • – To make the problem ever worse, Federal policies have recently proposed to relax Clean Water standards
    • – According to Global Green, 1.2 billion people, or almost 1 in 5 people worldwide, are without access to safe drinking water.
    • – And, out of 191 nations in the world, 10 nations share 65% of the world’s water resources.

    In developed countries we tend to take water so for granted that we let it run freely from the tap while we brush our teeth or over-soak our yards when we carelessly forget to turn off the sprinkler while many countries across the world don’t even have the basic access to safe drinking water.

    It’s time that we realize water is a precious resource, and its imperative that we stop wasting it.

    There are many simple things We can do:

    1. Conserve Water at Home

    There are also many things you can do to conserve water in your daily routine. In the bathroom you can install a low-flow toilet (which can reduce waste by 20%) or place a toilet dam in your toilet. What’s a toilet dam? It can be something as simple as a half brick or a bottle placed in your toilet tank to cut down the amount of water used with each flushing.

    For your shower, install a low-flow shower head. This can save up to 2.5 gallons (up to 9 litres) of water a minute! Think of taking shorter showers, some people even turn the water on to get themselves wet, turn it off to lather up, then turn it on again to rinse. If you have to take a bath, only fill it one-third full, just remember that showering does use less water than bathing.

    Don’t leave the water running when brushing your teeth, shaving, or washing your face.

    In the kitchen we can conserve water usage by pouring a pitcher of water, perhaps with a filtering system like Brita, and put it in the refrigerator if you like your water cold, this saves you from running the water to get it cold. Consider installing a instant water heater rather than running the water to get it hot.

    Don’t be wasteful with water. Don’t let it run down the drain. Whenever possible, reuse water. Waste water can be used to water plants or your lawn, for instance. You can install a water recirculation device, which can save up to 16,500 gallons (62,000 litres) of water a year. That’s a lot of water to save!

    And guess what else? This translates into cold, hard cash. Don’t overlook simple things.

    2. Use Care with Storm Drains

    Have you ever considered that anything that gets washed down a storm drain goes directly to local creeks, rivers, and streams, and eventually to the ocean? Think about it, when water from your hose washes over your yard or sidewalk or driveway, it is carrying pollution along with it. Things like fertilizer, pet waste, yard and grass clippings, paints, pesticides and motor oil can all impact our waterways through storm drains.

    3. Make Wise Food-Buying Choices

    Did you know that irrigation of agricultural crops accounts for more than 70% of freshwater consumed worldwide. That is a huge percentage, particularly in light of the fact that 1 in 5 people don’t have access to safe drinkable water.

    Farmers have options. They can switch to drip irrigation systems, which will result in a water savings of 30 to 70% while increasing crop yields. You have options too. Seek out and support local and organic farmers through the farmers markets. Farming organically has a huge impact on preventing global warming because of the 28 most commonly used pesticides, 23 are carcinogenic and end up in our water supply.

    This may surprise you but another simple thing to do is eat less meat. It takes up to 100 gallons (380 litres) of water to produce one quarter pound of meat. Yes, that burger you ate at lunch required 100 gallons of water to produce. As a comparison, one ton of beef needs 15,000 tons of water to produce while a ton of grain needs only 1,000 tons.

    To recap, here’s some Water Conservation Action Steps

    • - Be careful about what you let wash down storm drains
    • - Recycle motor oil properly
    • - Buy non-toxic alternatives to pesticides
    • - Dispose of pet waste in the garbage
    • - Plant native bushes and shrubs
    • - Water your lawn responsibly
    • - Install a low-flow toilet
    • - Install a toilet dam
    • - Avoid unnecessary flushing
    • - Check for toilet leakage
    • - Install a low-flow shower head
    • - Take shorter showers; fill the bathtub only one-third full
    • - Don’t leave the water running when brushing teeth or shaving
    • - Put drinking water in the refrigerator rather than run the tap
    • - Install an instant hot water heater
    • - Instead of using the sink disposal, compost!
    • - Only run the dishwasher when it is full
    • - Buy an energy-saving front-loading washer
    • - Don’t let water run down the drain
    • - Buy a water recirculator
    • - Check for leaky faucets
    • - Install flow restrictors
    • - Buy from farmer’s markets
    • - Eat less meat

    Any and all of those activities listed in this report will help. The only thing that won’t help is if you sit back and do nothing. There are way too many people all over the world who don’t know, don’t want to know or just don’t understand the severity of the problem. Now that you do, it’s up to you to take action. Whether you are 20 or 80 our future and the future of our children and grandchildren depend on it.
